The evening includes two courses of amuse bouche, a starter, fish course, meat course, cheese course, pre-dessert, dessert and sweet treats, the collection of wines, water and tea/coffee.
Thibault Jacquet, Director of the Domaine, will be our guide as we round off the winter season. Bonneau du Martray represents one of the ultimate estates of Burgundy. It is also the undisputed benchmark for the two appellations of Corton-Charlemagne and Corton, a single vineyard in a dominant position on the Bordeaux hillside terraces. As one of the pioneers of biodynamic viticulture, the wines from this estate are refined, luminous, lively and full-bodied.
Capable of long-term ageing, the Corton-Charlemagne wines captivate with their mystery, complexity, vigour and distinction. They are true wines for contemplation. 2018 showcases an expressive progression towards ever greater purity and precision. 2009 marvellously combines the fullness of a sunny vintage with saline finesse, while 1976 reveals a sublime aromatic intensity that culminates in earthy mushroom aromas.
As for the Corton wines, 2018 shows promise with its delightfully bitter notes, while 2003 is one of the most accomplished expressions of subtlety and depth.
As a prelude to the evening, we will be exploring the much-famed Californian Hilt Estate: an imposing domain marked by the influence of the Pacific Ocean. With its nod to Burgundy, the Chardonnay is silky smooth, balancing a remarkable mineral tension with the pleasure of ripe fruit and citrus notes. The Pinot Noir seduces with its floral, spicy aromas and elegant tannins.
What a privilege to welcome Édouard Vauthier of Château Ausone, an estate creating some of the finest wines in the world in Saint Emilion. Thanks to a complex limestone terroir situated on both plateau and hillside with a high planting density and, above all, a rare sensitivity and vision combining poetry and biodynamic viticulture, Alain Vauthier and his children, Pauline and Édouard, succeed in creating elegant vintages of extraordinary finesse and with an impressive capacity for ageing. Crispness, expressive fruitiness, sublime follow-through, vibrancy and superb elegance...There are not words enough to describe the emotions these wines evoke. Quite simply, a work of art.
Gilles Seroin joined his family's estate on the Gulf of Propriano in 1996, gradually building it into one of the most exciting wine estates in Corsica. Now assisted by his children, Jeanne and Guillaume, his talent as a winemaker continues to develop, as he expresses the identity of each of his plots in an eco-responsible way, having obtained organic certification in 2021. In all three colours, the wines are singular, expressive and ever more refined. The whites acquire real complexity with age: Myrtus is full-bodied and well-rounded, Burghese has extra depth and mystery with its notes of citrus peel and fine bitters. The reds are distinctive and inspiring: grown on granite soils, Elegante - in the spirit of the Rayas Grenache wines - is pure enchantment and exudes delicacy. Burghese is a paragon of sensuality, combining fullness and grace, while L'Ermite captivates with its purity and spicy finesse.
