René and Maxime Meilleur are firmly committed to their environmental and social responsibilities, and in raising awareness among their staff and customers alike, because they understand that the mission of a company director is also to uphold and pass on values.

Acting with common sense, whether this is in terms of sorting rubbish, combating waste or finding eco-responsible solutions, is part of the establishment’s day-to-day routine.

Purchasing the right amount of produce, working with it conscientiously and managing waste intelligently are all part of the kitchen reflexes, as they are in all the other departments of the hotel, in a sort of positive synergy that drives us to always do better.

The precision of the artistry, the sharing of skills and the passing on of expertise also form part of the daily practice of disseminating knowledge.
